On the occasion of an event organized by REJOLT, we met with François Gourceau, partner and co-founder of Monsieur Matin Traiteur and Philémon Traiteur. Twelve years of structuring, complete mastery of the value chain.
The adventure began twelve years ago with the creation of Monsieur Matin. Initially, production relied on partnerships with traditional Parisian bakeries. However, it quickly became clear that to meet companies' expectations for consistency, quality, and responsiveness, it was essential to integrate the entire production chain.
Kitchen after kitchen, the company is expanding. Today, the teams operate from their fifth production site, covering 1,200 m², which houses the bakery, pastry shop, and savory kitchen. This structuring ensures perfect coherence between the two brands while catering to distinct uses.
Monsieur Matin focuses on the highlights of daily corporate life: breakfasts, gourmet breaks, lunches, while Philémon Traiteur is more geared towards event formats, cocktails, inaugurations, seminars, and large-scale corporate events. Two brands, one vision, and an organization designed to last.

At Monsieur Matin, just like at Philémon Traiteur, simplicity is never synonymous with ease. It relies on a rigorous mastery of techniques, ingredients, and processes. "Keeping it simple is often the most demanding task," reminds François Gourceau. Behind every recipe, the focus on raw materials, preparation times, and consistency is paramount.
